Our UN/LIMITED collection was first launched in early 2014 and is all about experimentation and the creation of something extra special. We gave our brewers the freedom to get creative and brew the beers they would like to drink using speciality ingredients and innovative methods.
These are brewers beers for those with adventurous tastes - a premium product on the higher end of the alcohol percentage scale to allow the flavours to be maximized.
DOUBLE IPA

DOUBLE IPA
The Double IPA is the first beer brewed in our UN/LIMITED range. At 8.5%, its one of the best examples of this style of beer you are likely to taste. It’s all about the hops & so in addition to the normal hop additions for bittering & late addition we have added two dry hop additions post fermentation to really ram home the message.
The blend of Simcoe, Citra, Amarillo and Centennial hops really give you the full American Double IPA experience while keeping the bitterness very clean and crisp. Hop aromas are one of the first characteristics of a beer to diminish so it is essential to drink this beer fresh, as close to the bottling time as possible. This is the reason for adding a bottling date as well as a best before date.

BELGIAN RYE

BELGIAN RYE
The second beer to be released in the UN/LIMITED range is a creation all of our own – an amalgamation of three different styles of beer - a marriage between an American Rye and a Belgian Trappist style.
The yeast and the rye are giving most of the flavour – the Trappist style yeast comes up on the nose, with a floral & fruity hop aroma and the rye gives a lingering mild bitterness and spicy notes.

WHEAT WINE

Mashed with 75% malted wheat and fermented with our triple strain house yeast, the Wheat Wine is the third beer in the UN/LIMITED range. This oak bourbon barrel aged, smooth & full bodied beer has been conditioned on whole coffee beans, selected and roasted specifically for us by our friends at Extract Coffee Roasters.
Light and delicate for its 10% strength, this is a seriously special and complex beer that needs to be savoured like a fine wine.

BARLEY WINE

BARLEY WINE
The results of six months studying Barley Wine ageing have been brewed into this dark, red Burgundy barrel aged winter warmer. Made to drink now or laid down to age for many years.
A mountain of whole leaf English hops in the boil followed by extended ageing in oak impart the preservative and antioxidant compounds which both prevent staling and promote the development of unique novel flavours which will emerge over the years. Floor malted Maris Otter and extra dark crystal malts add richness and dried fruit flavours.

SOUTHERN CONSPIRACY

WHITE BURGUNDY BARREL AGED IPA
Four years in planning, Southern Conspiracy is the fifth addition to our UN/LIMITED range.
Wonderfully aromatic new season New Zealand hops mix with soft oak and delicate fruit aromas from months ageing in white Burgundy barrels. Added to this are intriguing aromatics from the wild yeast present in the fresh wine lees on which the beer was conditioned.
